Spelt Sourdough Bread Recipe

There is nothing like the smell and taste of freshly baked bread out of your oven!

I've been on a journey with bread making for a while, and started making my own spelt sourdough bread nearly a year ago.  Because spelt flour behaves differently to high-protein flours (like wheat), I had to keep trying something different until I found what works.

In this post I will share with you what works for me.

Time: The whole process takes 24 hours.  However, the amount of active time required of you is about 30 minutes.  The remainder of the time is when the dough is resting, proofing or baking.

Equipment you will need:

  • Glass Jar (the shape of a peanut butter jar)
  • Teaspoon
  • Mixing bowl
  • Spatula
  • Wooden spoon
  • Scale (this is what I use)
  • Bread baking tin
  • Baking paper
  • Dutch oven (I use this one)

Ingredients - Sourdough Starter

  • 50g lukewarm water
  • 20g sourdough starter (ask your friend circle to see if anyone has a live sourdough starter, or you can buy one)
  • 50g pizza flour (00 flour)

Ingredients - Bread Dough

  • 320g lukewarm water
  • 50g fresh sourdough starter
  • 500g white spelt flour, sifted
  • 10g salt

STEP 1:

In the bottom images above you see how much the starter has risen from when it was first mixed (picture on the bottom left), and then after 12 hours (picture on the bottom right).

STEP 2:

Make sure the starter is completely mixed into the water, so there are no more lumps at all.  It should look like milk.

STEP 3:

Be sure to not wet your hand too much, otherwise you are adding more water into the mixture.  A slightly wet hand will mean that you get almost no dough stuck to your hand.

STEP 4:

This is the messiest part.  The top picture above is how much your dough should have risen.  Be sure to place flour on your hands to help the dough not stick to you too much.  Putting the dough onto the baking paper first, and then lifting the baking paper into the tin (with the dough), makes the process much easier.
